Assassin's Creed is taking (another) break in 2019. Since the release of Assassin's Creed II in 2009, Ubisoft's historical bloody franchise has seen a release of a major game every year. The one exception is with Assassin's Creed Origins. The only Creed titles released between Assassin's Creed Syndicate in 2015 and Origins in 2017 were side-scrolling spinoffs.
It seemed like the release of Origins signaled a new beginning to Assassin's Creed, not only in terms of gameplay but also release schedule. Ubisoft surprised almost everyone by unveiling Assassin's Creed Odyssey at E3 2018 and setting it for release less than a year after Origins. Odyssey, it turns out, is the exception not the rule. After the Greek epic is released, fans shouldn't expect a new Assassin's Creed until 2020.

According to Gamespot, who interviewed Ubisoft's CEO Yves Guillemot at Gamescom 2018, Assassin's Creed Odyssey is the last game for a year in the franchise. Odyssey is only coming out so closely to Origins because the two games were developed at the same time. For the next entry, a bigger break (and more development time) will be required. This doesn't mean that there will be no new Assassin's Creed content after Odyssey. Guillemot didn't confirm if any spinoff titles would arrive. However, he did explain that Odyssey would be supported with new content long after its release:
What you'll have is lots of content coming on [Assassin's Creed Odyssey]. The team really want to give, on a regular basis, some new possibilities for play, so when you get [Odyssey] this year, you're going to get in for a couple of years, actually.
Assassin's Creed Odyssey has an announced season pass for future DLC, so it comes as no surprise that Ubisoft is planning more content for the title. There's a chance though that Odyssey's season pass could extend for longer than the average Assassin's Creed title. Assassin's Creed Origins' season pass involved two rather lengthy expansions and some cosmetic items, all of which released in early 2018. If there's no new Assassin's Creed until 2020, Odyssey could be receiving paid (and free) expansions until early 2020 to tie fans over. Guillemot certainly seems to suggest that possibility with his tease that Odyssey should last "a couple of years."
However, this is assuming that Ubisoft's CEO is being entirely truthful. Prior to the leak (and reveal) of Assassin's Creed Odyssey, Guillemot suggested that Origins would be Ubisoft's sole Assassin's Creed focus in 2018. Back in February 2018, on an earnings call, Guillemot claimed that Ubisoft was just concentrating on Assassin's Creed Origins and producing a "few other DLCs" for it. This call happened before Origins' free update of the "Discovery Tour" and its paid expansion, "Curse of the Pharaohs" were available. Technically, Guillemot wasn't lying about new DLCs, and the CEO never explicitly said that there wouldn't be a new Assassin's Creed game in 2018, as he is currently about 2019. It was just implied.
Assassin's Creed taking a break after Odyssey is probably best for the series. The year-long break not only prevents franchise fatigue, but also improves the chances of the individual games being of higher quality. Assassin's Creed Origins was a huge improvement over previous titles. A large factor in that quality was the extended development time that Origins received. Hopefully, Odyssey will be of a similar caliber, but the longer the follow-up is in development, the better.
